Taiwan

Taiwan has special geographical environment and climate. We can classify various tea regions base on these condition. Each tea regions have their typical tea. These typical tea have their own Character, for example, one of the most popular Oolong varieties, this tea is made of Taiwan exclusive “Jinsyuan” fresh tea leaves grown in Alishan mountains. The yellowish-golden infusion is highlighted by a rich milky aroma, brisk fragrance of mountain air, and a hint of velvety sweetness. A tapestry of fragrance.

In Taiwan, almost all family have some simple tea wares, so we can brew tea in any time if we want. Some people will prefer bring some tea bags when they go somewhere. In short, no matter where we are, we can have a cup of nice tea.

Because tea is our necessary drink, high quality loose tea leaf or tea bags can be seen as good gift for Taiwanese. Even in some social place, high level tea is not only equal high level wine but also a symbol of high status.

In recent years, Handmade drinks have been become popular in Taiwan. At the same time, Some Taiwanese don’t know what the original Taiwanese tea culture is.

Japanese

Japanese prefer steamed green tea, oolong tea, sencha, and matcha. Almost all Japanese family drink a cup of tea after they finish their meal. If they can’t brew tea, they will usually buy bottled tea.

Type of Oolong Tea - part 2

(Note: Degree of roasting and degree of fermentation usually have a little different in each tea retailer. So our number is for reference only.)
Degree of fermentation



Dong Ding Oolong Tea 

Tea’s color: Honey Yellow
Degree of roasting: Medium
Degree of fermentation: About 20~30%
Characteristics:  Some emphasize the roasted aroma, while others emphasize the balance between roasted aroma and flowery fragrance. 

Honey Oolong Tea
Tea’s color: Amber
Degree of roasting: Medium
Degree of fermentation: About 30~40%
Characteristics: This flush features fresh tea leaves which are naturally fermented after bitten by small green leafhoppers and a delicate fruity scent. This memorable amber infusion is embellished with an alluringly rich aroma of Spanish limes and a hint of mint, leaving the crisp and sweet freshness on the palate. 

Tie Guan Yin Oolong Tea
Tea’s color: Amber
Degree of roasting: High
Degree of fermentation: About 30~50%
Characteristics: This fascinating tea,  heavily fermented, infuses into an amber-colored cup with an aroma of ripe fruits, subtle tartness, and overtones of sweet osmanthus and frankincense.

Oriental Beauty (White Tip Oolong)
Tea’s color: Amber
Degree of roasting: High
Degree of fermentation: About 70~80%
Characteristics: Oriental Beauty, also known as White Tip Oolong, made from “Qing Xing Dapan”, and also a heavily fermented tea characteristic of its traditional processing of the tender tea buds bitten by small green leafhoppers. Rich honey and fruity aroma mix together. Moreover, it's the unique tea made in Taiwan.
