Is High Mountain Tea Equivalent To Green Tea?


     Common Producing Area of High Mountain Tea

The so-called high mountain tea refers to the tea produced at an elevation of 1,000 meters above the tea plantation. Therefore, "high mountain tea" does not specifically refer to tea produced in a certain place, but a conceptual term relative to " lowland tea". Here we will introduce several famous high mountain teas in Taiwan; There are three major mountain tea regions in Taiwan, namely Alishan, Lishan, and Shanlinshi. Although the production is less in  Lalashan and Hehuanshan, the two places  are also the most famous tea regions in Taiwan.


       Different Manufacturing Process Between High Mountain Tea and Green Tea

High mountain tea is a partially fermented tea, and tea leaves are in loose ball shape; Green tea is a non-fermented tea, and tea leaves are in a twist shape. So mountain tea and green tea are not the same. When the high mountain tea is produced, the process of withering and tossing is fermenting, which will make the tea ingredients undergo a chemical change and promote the generation of sweetness. Green tea is directly to fixation without fermentation, therefore the tea tastes more natural.

Although high mountain tea has been fermented, the quality of each kind tea is different, and the characteristics of tea are different. For example, the degree of fermentation of Oriental Beauty and Tie Guan Yin is more than 60%, the fermentation is heavy and the taste is also thicker. Moreover, tea soup is also dark in color. High mountain oolong tea and Jin Xuan tea belong to lightly fermented tea. The taste of the tea is relatively fresh, and the color of the tea soup is light green.

   
        Characteristics of High mountain tea and Green Tea  

       High mountain tea has innate geographical environment advantages. The oolong tea made from scent can give off floral aromas and tastes elegant. It is made of oolong tea with high degree of fermentation and baking, such as frozen top and Tie Guan Yin. Located in the high mountains, the leaves are more hypertrophic and pectin-rich. It tastes mellow, and the throat rhyme flows. The green tea has a sweet, fresh and elegant taste, and is suitable for drinking in spring and summer.
