Taiwan has special geographical environment and climate. We can classify various tea regions base on these condition. Each tea regions have their typical tea. These typical tea have their own Character, for example, one of the most popular Oolong varieties, this tea is made of Taiwan exclusive “Jinsyuan” fresh tea leaves grown in Alishan mountains. Type of Oolong Tea - part 1

(Note: Degree of roasting and degree of fermentation usually have a little different in each tea retailer. So our number is for reference only.)

Pou Chong Oolong Tea

Tea’s color: Green Yellow

Degree of roasting: None

Degree of fermentation: About 8-10%
Characteristics: delicate fragrance with fresh flora aroma. The degree of fermentation

is low and nearly as same as green tea. It’s one of the good option for drink in

spring and summer time.

Alishan Jin Xuan Oolong Tea

Tea’s color: Golden Yellow
Degree of roasting: Low

Degree of fermentation: About 15-20%

Characteristics: Jin Xuan Oolong tea, which is the Taiwan’s endemic species, is planted in Alishan high mountain. This kind of Oolong gives off milky aroma, brisk fragrance of mountain air, has velvety sweetness and is not bitter. That’s why Jin Xuan Oolong is very popular. It is also one of the good option for beginners.

High Mountain Oolong

Tea’s color: Yellowish-Honey Green

Degree of roasting: Low

Degree of fermentation: About 15~20%

Characteristics: In Taiwan, the tea which is planted at the altitude higher than 1,000 meters above sea level is called “High Mountain Oolong”. We can divide and classify various tea regions based on different altitudes(e.g., Alishan, Dayuling, Lishan).

All the High Mountain Oolong is made from “Qing Xin Oolong”. The most difference with the other kind of Qing Xin Oolong is tea leaf and characteristics. The tea leaf of High Mountain Oolong is thick. And it characteristics is bright floral aroma, full body, and smooth finish.
